Refrigerator Bran Muffins - cooking recipe

Ingredients
    1 (15 oz.) box Raisin Bran or Total Cereal
    5 c. All-Purpose Flour
    3 c. Sugar
    5 tsp. Baking Soda
    2 tsp. Salt
    4 Eggs, beaten
    1 qt. Buttermilk
    1 c. Oil
    3/4 c. Raisins (optional)
    3/4 c. Pecans (optional)
Preparation
    Combine the first 5 ingredients in a large bowl, make a well in center of the mixture.
    Add Eggs, Buttermilk and Shortening.
    Stir just enough to moisten ingredients.
    Cover and store in refrigerator until ready to use, as long as five to six weeks. When ready to bake, spoon batter into greased muffin tins, filling 2/3 full.
    Bake at 350 for 20 minutes.
    Yields 5-1/2 dozen.
