Mexican Cornbread - cooking recipe
Ingredients

1 1/2 c. self-rising corn meal
1 tsp. baking powder
2 eggs or equivalent
1/2 c. oil
1 c. sour cream
1 small can creamed corn
1 can jalapeno pepper, finely chopped
1 onion, chopped
4 oz. grated Cheddar cheese
Preparation

Mix all ingredients except cheese.
Pour 1/2 batter into well oiled hot iron skillet or 9 x 9-inch pan.
Sprinkle on cheese. Add remaining batter and spread evenly.
Bake at 350\u00b0 for 45 minutes.
