White Beans And Roasted Garlic Spread - cooking recipe
Ingredients

1 head (about 12 cloves) garlic, separated, but not peeled
2 (19 oz. each) cans white beans, rinsed and drained
1/4 c. lemon juice
1 Tbsp. olive oil
2 Tbsp. minced fresh parsley
1/4 tsp. ground black pepper
1/4 c. minced red onions
1/4 c. minced green pepper
Preparation

Place the garlic in a custard cup.
Bake at 400\u00b0 for 15 minutes or until soft when tested with the tip of a knife.
Do not allow the garlic to brown.
Let cool slightly, then slip off the skins and trim off the hard stem ends.
Place half of the beans, plus the lemon juice, oil and garlic in a food processor.
Puree until smooth.
Transfer to a medium bowl.
Stir in the parsley, black pepper, half of the onions, half of the green peppers and the remaining beans.
Roughly mash the whole beans with fork.
