Beef And Barley Soup(Weight Watchers) - cooking recipe

Ingredients
    1 1/4 lb. ground beef
    1 qt. low-sodium beef broth
    1 tsp. reduced-sodium soy sauce
    1/4 tsp. dried oregano
    1 medium carrot
    2 medium stalks celery
    1 Tbsp. plus 1 tsp. olive oil
    2 c. stewed tomatoes
    2 drops hot pepper sauce
    1/2 medium green bell pepper, chopped (optional)
    3 oz. quick cooking barley
Preparation
    In a large pan, warm olive oil and brown ground meat.
    Drain grease.
    Add broth, tomatoes with liquid, soy sauce, hot pepper sauce and oregano.
    Bring to a boil.
    Cover, reduce heat to low and simmer for 30 minutes.
    (I also add celery and carrots so they can get tender.)
    Then add the barley to the pot.
    Cover and simmer until barley is tender, about 15 to 20 minutes.
