4 bell peppers
1 lb. ground beef
1 c. cubed Velveeta cheese
1 c. shredded Monterey Jack cheese
1 pkg. taco seasoning mix
2 c. V-8 juice
Preparation

Cover bell peppers with water and boil about 5 minutes.
Drain and set aside.
