Mandarin Orange Salad - cooking recipe
Ingredients

2 large heads romaine lettuce
3 stalks chopped celery
3 cans mandarin oranges, drained
1 (8 oz.) pkg. slivered almonds
1/2 c. sugar
1 c. salad oil
1/2 c. vinegar
6 Tbsp. sugar
salt to taste
3 tsp. almond extract
Preparation

Toss lettuce with celery and oranges.
Place slivered almonds and 1/2 cup of sugar in a frying pan.
Fry until golden brown, stirring constantly.
Place on waxed paper and crumble when cool. Heat salad oil, vinegar and 6 tablespoons of sugar for 2 minutes. Cool.
Add almond extract.
Add dressing to greens and toss.
Place on plates and garnish with crumbled almonds.
Serves 8.
