Apricot On The Half-Shell - cooking recipe

Ingredients
    10 apricots
    1/2 c. orange juice and pulp
    1/2 tsp. cinnamon
    1/2 tsp. almond extract
    2 tsp. maple syrup
    3 Tbsp. low-fat cottage cheese, pressed through sieve
    orange peel (for garnish)
Preparation
    Cut apricots in half, then remove the pits and stems.
    In a large bowl, combine orange juice, cinnamon, almond extract and maple
    syrup.
    Add apricots and toss until they're well coated. Then let them marinate for 30 minutes.
    Preheat broiler.
    Remove apricots from the bowl, reserving marinade.
    Fill each apricot half with about 1/2 tablespoon of cheese and set on a baking sheet; broil until light brown.
