"Paximathakia" - Sweet Rusks - cooking recipe

Ingredients
    4 1/2 c. sifted flour or more as needed
    1/2 c. oil
    1 c. plus 2 tsp. sugar
    3 eggs
    2 tsp. baking powder
    1/2 tsp. baking soda
    1 1/2 tsp. cinnamon
    1/2 c. plus 1 Tbsp. butter
    1 Tbsp. vanilla
    3/4 oz. whiskey or brandy
    1/2 c. chopped pecans (optional)
Preparation
    Cream butter; add oil and beat.
    Add sugar and beat again.
    Add eggs and beat well.
    Add brandy and vanilla, then add flour with the other dry ingredients.
    Add sufficient flour to make a soft dough.
    You may add 1/2 cup chopped pecans, which have been dredged in flour.
    Shape into 6 loaves.
    Do 3 loaves on one cookie sheet. Roll and pat the loaves out about the length of the cookie sheet.
