Watermelon Rind Pickles - cooking recipe

Ingredients
    5 lb. rind (after trimmed)
    2 lb. sugar
    2 c. vinegar
    2 c. water
    1/2 tsp. oil of cloves
    1/2 tsp. oil of cinnamon
    dash of mace
Preparation
    Mix 1/2 cup of salt with 2 quarts of water.
    Soak rind overnight; drain.
    Rinse with clear water and drain.
    Cook in fresh water until tender (about 10 minutes).
    Drain thoroughly.
