Potato Cheese Soup(Makes 4 Servings) - cooking recipe

Ingredients
    1 stick butter
    1/2 c. chopped onion
    2 Tbsp. flour
    2 c. milk
    2 c. chicken broth
    2 large potatoes, peeled and sliced
    1 c. grated Cheddar cheese
    2 green onions, sliced
Preparation
    Melt butter in 2-quart saucepan.
    Add onion; saute until tender (5 minutes).
    Add flour; stir until it starts to turn brown (2 to 3 minutes).
    Stir in broth, then milk, stirring constantly. Add potatoes and green onions; simmer for 30 minutes.
    Add cheese; stir to melt.
    Serve topped with cooked, crumbled bacon, if desired.
