Ingredients

1/2 gal. milk
1/4 lb. butter
3/4 c. sugar
1 c. rice
1 egg
1/2 pt. heavy cream
1 tsp. vanilla
1 1/2 oz. Amaretto (optional)
cinnamon
Preparation

Bring milk, butter and sugar to a slow boil.
Add rice.
Lower flame to simmer and cook 45 minutes.
Stir often.
Beat together the egg, cream, vanilla and Amaretto (if using) and add to the cooked rice.
Mix thoroughly.
Put in a serving dish and let cool. Sprinkle with cinnamon.
Refrigerate.
