Sugar-Free Lemon Cheese Cake - cooking recipe

1 lb. Neufchatel cheese, softened
1 lb. low-fat cottage cheese
1 c. Egg Beaters
3 Tbsp. Equal
1/2 c. lemon juice
2 Tbsp. grated lemon rind
Preparation

In a mixing bowl, whip the cheeses until smooth. Add Equal and lemon rind.
In a separate bowl, mix lemon juice and eggs until smooth. Add egg mixture slowly, one cup at a time.
Mix well. Bake at 300\u00b0 for 1 1/2 hours.
