Beer - Cheese Soup - cooking recipe
Ingredients

2 1/2 c. (20 oz.) beer
2 1/2 Tbsp. chicken stock base
3 c. milk
1/3 c. all-purpose flour
1 lb. sharp Cheddar cheese, shredded
salt and freshly ground pepper
Preparation

Combine beer and stock base in 3-quart saucepan; stir over medium-high heat until stock base is dissolved.
Cover and simmer about 10 minutes.
Blend 1 1/2 cups milk with flour in medium bowl.
Gradually stir into soup, blending well.
Add remaining milk and cook, stirring occasionally, until thickened, about 15 minutes.
Blend in cheese, a little at a time, stirring until melted.
Season to taste with salt and pepper.
Ladle soup into individual bowls and serve immediately.
Makes 6 to 8 servings.
