Alphabet Minestrone - cooking recipe

Ingredients
    1 Tbsp. plus 1 tsp. olive oil
    2 cloves garlic, minced
    3 c. low-sodium chicken broth
    1 1/2 c. canned, crushed tomatoes
    1/2 c. thinly sliced carrots
    1 c. sliced zucchini
    3/4 oz. grated Parmesan cheese
    1/2 c. thinly sliced celery
    1/2 c. fresh or frozen green beans, halved
    5 oz. drained, cooked chickpeas
    3/4 oz. alphabet pasta
    1 tsp. fennel seed
    3/4 tsp. dried basil
    3/4 tsp. dried oregano
Preparation
    In a medium saucepan over medium-high heat, warm the oil until hot, but not smoking.
    Add garlic and saute for 1 minute, stirring constantly.
    Add broth, tomatoes, zucchini, carrots, celery, green beans, potatoes, chickpeas, pasta, fennel seed, basil and oregano. Bring to boil over medium-high heat.
    Cover, reduce heat to low and simmer until pasta and vegetables are cooked through, 10 to 15 minutes.
    Stir in Parmesan cheese and serve hot.
