Maple-Pumpkin Pancakes - cooking recipe
Ingredients

3/4 c. quick oats (uncooked)
1 1/2 c. skim milk
2 eggs, lightly beaten
1/2 c. cooked, mashed pumpkin
3 Tbsp. maple syrup
1 Tbsp. vegetable oil
1 1/4 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
Preparation

Combine oats and milk; let stand 5 minutes. Add eggs, pumpkin, maple syrup and oil; stir well. Combine flour, baking powder, salt and cinnamon in a large bowl. Make a well in center of mixture. Add oat mixture to dry ingredients, lightly stirring. For each pancake, pour 1/4 cup batter onto a hot skillet, coated with cooking spray.
Turn pancakes when tops are covered with bubbles and edges look cooked. Yields 16 servings.
