Florentine Baked Potatoes - cooking recipe

Ingredients
    6 baking potatoes
    1/2 c. dairy sour cream
    1/2 c. (2 oz.) grated Blue cheese
    1/2 tsp. salt
    1 (10 oz.) pkg. frozen chopped spinach, cooked and well drained
    pimento strips (optional)
Preparation
    Scrub potatoes; prick skins with a fork.
    Bake potatoes in a 375\u00b0 oven for 1 1/2 hours or until tender.
    While potatoes are still hot, cut slice from top of each and scoop out center, taking care not to break skin.
