Pouleta Sa Creme - cooking recipe

Ingredients
    4 half chicken breasts, boned and skinned
    flour
    1/2 lb. butter
    8 oz. mushrooms, thinly sliced
    1/2 pt. whipping cream
    1/4 c. cream sherry
    1/8 tsp. tarragon, rubbed
Preparation
    Dredge chicken in flour and brown in half the butter.
    Bake at 300\u00b0 for 1 hour.
    Cook mushrooms in remaining half of butter.
    Add whipping cream, sherry and tarragon.
    Simmer until consistency is like medium-thick gravy (flour can be used to thicken).
    Serve over bed of rice.
    Serves 4.
