Red Beans And Rice - cooking recipe

Ingredients
    3 c. chopped onion
    1 c. chopped green pepper
    1 c. chopped parsley
    3/4 tsp. red pepper
    1/4 tsp. oregano
    3 to 4 dashes Tabasco sauce
    1 bunch green onions, chopped
    4 tsp. minced garlic
    1 lb. dried red beans
    1/2 lb. ham hock
    2 qt. water
    1 Tbsp. salt
    1 tsp. black pepper
    2 bay leaves
    1 Tbsp. Worcestershire sauce
Preparation
    Cover beans and soak 2 to 3 hours.
    Drain and cook beans in 2 quarts of water for 45 minutes.
    Add remaining ingredients and cook slowly for 2 to 3 hours.
    Stir occasionally.
    Put in Chaurice sausage or any smoked sausage of your choice the last hour.
    Cut into bite size chunks.
    Serve over rice.
