Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant, pared and cubed
    1 1/4 c. shredded sharp processed American cheese
    2 Tbsp. snipped parsley
    1 clove garlic, minced
    1/8 tsp. pepper
    1 1/4 c. Ritz cracker crumbs (approximately 20)
    2 beaten eggs
    2 Tbsp. sliced onions
    1/2 tsp. salt
    2 Tbsp. cooking oil
Preparation
    In covered saucepan cook eggplant in boiling water until tender, about 5 minutes; drain well and mash.
    Stir in crumbs, cheese, egg, parsley, onion, garlic, salt and pepper.
    Shape into 8 patties about 3-inches in diameter.
    Cook in hot oil about 3 minutes on each side until golden brown.
    Makes 4 servings.
