French Fried Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1 Tbsp. salt
    1 egg, beaten
    corn meal
Preparation
    Peel and cut eggplant in strips; soak in salt water for 30 minutes or longer.
    Drain.
    Dip in egg, then in corn meal.
    Fry in hot oil until brown.
    Drain on paper towel.
