Provencal Grilled Lamb Chops - cooking recipe

Ingredients
    4 shoulder, loin or rib lamb chops
    4 Tbsp. olive oil
    2 cloves garlic
    juice of 1 lemon
    2 Tbsp. red wine vinegar
    1 tsp. chopped thyme
    Montrachet or similar goat cheese
Preparation
    Mix all ingredients together except cheese.
    Marinate chops in marinade and let stand at least 2 hours (ideally overnight or all day in refrigerator).
    Grill or broil to desired doneness on each side.
    Do not overcook.
    Immediately place 2 tablespoons of cheese on top and let melt.
    Serve with a hearty red wine, salad and crusty bread.
