Sausage Soup With Tortellini - cooking recipe
Ingredients

1 lb. Italian hot sausage
1 c. chopped onions
4 to 5 c. beef broth
1 c. water
1/2 c. dry red wine
1 (16 oz.) can plum tomatoes
1 c. sliced carrots
1 1/2 c. sliced zucchini
1 (8 oz.) can tomato sauce
1 Tbsp. dry basil
3 Tbsp. fresh parsley, chopped
8 oz. cheese-filled tortellini (frozen)
grated Romano cheese (to sprinkle before serving)
Preparation

In a large pot or Dutch oven, brown sausage meat (out of casing) with chopped onion until brown.
Drain off drippings.
Add beef broth, water, wine, tomatoes, tomato sauce, basil and parsley.
Bring to a boil and let simmer for 1/2 hour.
Skim any fat off.
Add carrots and cook about 10 to 15 minutes.
Add zucchini and cook 5 to 10 minutes until vegetables are tender.
