Eggplant Fritters - cooking recipe
Ingredients
- 
                            2 Tbsp. flour
 
1 egg, beaten
3 c. cooked eggplant, mashed
1/2 tsp. salt
dash of cayenne
fat
Preparation
- 
                            Stir all together and beat until light.
 
Drop by tablespoons into hot deep fat (375\u00b0).
Fry until brown.
Serves 6 to 8.
