Funnel Cakes - cooking recipe

Ingredients
    2 beaten eggs
    1 1/2 c. milk
    2 c. sifted all-purpose flour
    1 tsp. baking powder
    1/2 tsp. salt
    2 c. cooking oil
Preparation
    Combine eggs and milk in mixing bowl.
    Sift together flour, baking powder and salt.
    Add to egg mixture; beat smooth with rotary beater.
    (Test mixture to see if it flows easily through funnel, if too thick, add milk; if too thin, add flour.)
    Heat oil to 360\u00b0 in a 8-inch skillet.
    Covering bottom opening of funnel with finger, pour 1/2 cup batter into funnel.
    Remove end of the funnel close to the surface of the oil.
    Fry until golden, about 3 minutes, turn and cook 1 minute more.
    Drain on paper towels. Sprinkle with confectioners sugar.
    Makes 4.
