Ingredients

4 medium potatoes
1/2 onion (if you like)
2 eggs
3 Tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1/4 c. salad oil
Preparation

Pare and coarsely grate potatoes and onion.
Add eggs and mix well.
Sprinkle with flour, salt and pepper and mix well.
Heat oil in a large skillet.
Drop potato batter by heaping tablespoon into skillet.
Saute until golden brown and crisp on bottom, turn and cook until golden brown.
Serve immediately.
