Stir-Fry Beef With Tomatoes - cooking recipe

2 lb. sirloin, round, flank or chuck steak
2 Tbsp. sugar
1/2 c. soy sauce
1 clove minced garlic
1/4 tsp. ginger
1/4 c. water
3 Tbsp. salad oil
2 large green peppers, cut in strips
3 green onions with tops, sliced
2 large tomatoes, cut in wedges
1 Tbsp. cornstarch
Preparation

Freeze steak for 30 minutes, then slice diagonally across grain in 1/8-inch thick slices.
In 2-cup glass measure combine sugar, soy sauce, garlic and ginger.
Pour over sliced meat in medium bowl.
Marinate at least 30 minutes, turning meat after 15 minutes. Heat microwave browning dish for 6 minutes or until very hot. Remove meat from marinade, reserving extra.
Add oil and meat; microwave 5 to 6 minutes on High, stirring halfway through cooking. Add green peppers and onion.
Microwave on High 4 to 5 minutes, stirring halfway through cooking.
Top with tomato wedges.
In a 1-cup glass measure combine cornstarch, water and remaining marinade.
Microwave 1 to 2 minutes more.
Let stand for 5 minutes. Serve on cooked rice.
