Apricot Cheese Delight - cooking recipe
Ingredients

1 can apricots, drained and cut fine (reserve juice)
1 (29 oz.) can crushed pineapple, drained (reserve juice)
2 (3 oz.) pkg. orange Jell-O
2 c. hot water
1 c. combined apricot and pineapple juice
3/4 c. miniature marshmallows
Preparation

Drain and chill fruit. Reserve juice. Dissolve Jell-O in boiling water. Add to fruit juice. Reserve remainder of fruit juice for topping. Chill until slightly congealed. Fold in fruit and marshmallows. Pour into baking dish. Chill until firm. Spread with fruit cheese topping.
