Brenda'S Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
3/4 c. all-purpose flour
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. ginger
Preparation

Place eggs in bowl.
Beat for 1 minute at medium speed. Gradually sprinkle in sugar and beat for 4 minutes.
Reduce to stirring and add pumpkin.
Stop and scrape bowl.
Combine flour, baking powder, cinnamon, nutmeg and ginger.
Stir together with mixer, and gradually add flour mixture to egg mixture for about 1 minute.
Line a 9 x 13- x 3/4-inch jelly roll pan with waxed paper and grease.
Pour the mixture into the pan and bake at 375\u00b0 for 12 to 13 minutes.
Remove from the oven and immediately turn onto a towel sprinkled with powdered sugar.
Remove the waxed paper and roll the cake and towel together; cool completely.
