Kumquats (Preserved-Whole) - cooking recipe
Ingredients

1 qt. kumquats
1 1/2 c. water
1 1/2 c. sugar
Preparation

Mix sugar and water together and boil for 5 minutes to make syrup.
Cool.
Wash kumquats thoroughly.
Cut small cross in blossom end with scissors.
Place in cooled syrup.
Bring to a boil, reduce to a simmer.
Cover and simmer gently for 1 hour.
Do not remove cover until fruit and syrup are cool.
Fruit will stay plump.
(If you remove cover before both are cool, the fruit will wrinkle.)
Put in jars and keep refrigerated.
