Chef Bramons Pioneer Beef Stew - cooking recipe

Ingredients
    2 1/2 lb. beef chuck, cut into 1 1/2-inch cubes
    1/4 c. onions, chopped
    1 clove garlic, chopped fine
    1 small can pearl onions
    1/2 lb. salt pork, cut into 1/2-inch cubes
    1/2 lb. mushrooms
    1/2 qt. stock or water
    8 oz. Burgundy wine
    1 tsp. pepper
    1/2 tsp. salt
    1/2 lb. butter or shortening
    1/2 c. flour
    4 oz. tomato paste
Preparation
    Saute salt pork, set aside.
    Brown beef in butter.
    Add chopped onion and garlic.
    Add flour (make a paste with a little warm water).
    Add tomato puree and stock.
    Cook 2 to 2 1/2 hours. Add pearl onions (optional), mushrooms and salt pork.
    Let simmer 15 minutes.
