Chow-Chow Relish - cooking recipe

Ingredients
    4 c. chopped purple cabbage (may use green)
    2 c. chopped onion
    2 c. chopped green sweet peppers
    2 c. chopped green tomatoes
    1/2 c. salt
    8 c. water
    3/4 c. sugar
    3 Tbsp. mustard seeds
    4 c. vinegar
Preparation
    Wash all vegetables. Peel onion and remove pepper seeds. Chop all vegetables and measure. Dissolve salt in water. Pour over vegetables and let stand 1 hour. Drain and taste. If too salty, rinse again. Mix vegetables with sugar, mustard seeds and vinegar. Simmer 20 minutes, then bring to a full boil. Pack boiling hot into jars and seal at once.
