Lentil Soup - cooking recipe

Ingredients
    1 qt. tomato juice or tomatoes, blended lightly
    1/2 c. chopped celery
    1 medium onion, chopped
    1/2 c. red or green pepper
    1 tsp. Italian seasoning
    2 c. sprouted lentils
    salt to taste
Preparation
    Simmer ingredients for an hour or so, then add cooked potatoes and carrots, about 2 cups diced potatoes and 1 cup diced carrots. Add water to soup to taste.
    Cook for about another 30 minutes or so.
