Coconut Raisin Loaf - cooking recipe

Ingredients
    1 small or medium coconut, removed from shell and grated
    1 c. raisins
    1/4 lb. (1 stick) butter or margarine
    1 c. sugar
    2 c. flour (all-purpose)
    1 Tbsp. baking powder
    1/2 tsp. salt
    2 eggs, slightly beaten
    1 c. milk
    1 tsp. vanilla extract*
    1/2 tsp. nutmeg
Preparation
    Cream butter and sugar.
    Add coconut, raisins, vanilla and nutmeg.
    Add slightly beaten eggs.
    Combine flour, baking powder and salt.
    Add to coconut/raisins mixture alternately with milk. Pour into well-greased and floured loaf pan.
    Bake at 350\u00b0 for approximately 1 1/2 hours or until center tests dry.
    Let cool for a few minutes before removing from pan.
    Delicious served with any hot beverage.
