Irish Freckle Bread - cooking recipe
Ingredients

2 potatoes, cooked and mashed
1 c. warm water
2 pkg. yeast
1/2 c. butter
1 tsp. salt
8 Tbsp. sugar
2 eggs, beaten
1 c. raisins
5 1/4 c. flour
Preparation

Mix yeast in warm water.
Let stand for 5 to 10 minutes.
Add mashed potatoes, butter, salt, sugar, eggs and raisins.
Mix well.
Let rise and then punch down.
Put in greased loaf pans. Let rise again.
Bake at 350\u00b0 until golden brown.
Frost with confectioners sugar and lemon juice icing.
