Green Bean Soup - cooking recipe
Ingredients

3 oz. bacon
16 oz. onion, small dice
6 oz. celery, small dice
6 oz. carrots, small dice
1 gal. chicken stock
2 lb. potatoes, medium dice
6 small cans green beans
1 pkg. egg noodles
1 c. flour
1 1/2 Tbsp. water
1 1/2 c. sour cream
salt, to taste
pepper, to taste
Preparation

Saute bacon until crisp. add carrots, celery, onions and cook until tender.
Add chicken stock and potatoes.
Prepare noodles and either pinch off or cut into 1 inch squares, add to stock. Add green beans and cook until potatoes and noodles are done. Take some of the liquid and mix with sour cream and put back into the soup.
Adjust seasoning and serve.
Makes 24 to 30 servings.
