Lemon Cheese Or Curd - cooking recipe

Ingredients
    3 lemons, juiced
    1 Tbsp. lemon rind, grated
    2 c. sugar
    2 Tbsp. butter, cut into cubes
    3 eggs, slightly beaten
Preparation
    In a large saucepan, mix lemon juice, rind and sugar.
    Add butter and eggs.
    Mix well; simmer slowly over a low heat, stirring steadily, until mixture thickens, about 12 minutes.
    It will be firmer when chilled.
    Pour into sterilized jars with screw top lids.
    Store in refrigerator.
    Makes 1 pint.
    Can be doubled.
