Fruit Juice Cake(Diabetic) - cooking recipe

Ingredients
    1/2 c. prunes, chopped
    1 Tbsp. grated orange peel
    1/2 c. nonfat dry milk
    4 Tbsp. margarine
    1 egg, beaten
    3/4 c. orange juice
    1 c. flour
    1 1/2 tsp. baking powder
    1/2 tsp. salt
Preparation
    Combine prunes and orange peel; set aside.
    Cream dry milk with margarine.
    Add egg and orange juice; mix well.
    In another bowl, combine flour and baking powder.
    Add salt.
    Add to prune mix; stir well.
    Then stir in dry ingredients.
    Put in 9 x 5 x 3-inch loaf pan and bake at 325\u00b0 for 45 minutes.
    One slice contains 101 calories.
