Lighter Chicken Cacciatore - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 cloves minced garlic
    3 whole chicken breasts, halved and skinned
    1 large onion, cut in rings
    1/2 c. chopped red or green pepper
    1 (16 oz.) can tomatoes, drained
    8 oz. can tomato sauce
    1/4 c. white wine
    2 (4 oz.) cans sliced mushrooms
    1/4 tsp. basil
    1/2 tsp. oregano
    1 bay leaf
    1/8 tsp. black pepper
Preparation
    Heat oil and garlic.
    Brown chicken 5 minutes each side. Remove chicken and set aside.
    Cook onion and green or red pepper until tender.
    Add remaining ingredients, including chicken. Cover and simmer about 1/2 hour.
    Remove bay leaf.
    Serve over rice or linguine.
