Sausage Jambalaya - cooking recipe

Ingredients
    2 lb. smoked sausage
    1/2 c. oil
    1 large onion, chopped
    2 stalks celery, chopped
    1 medium bell pepper, chopped
    2 or 3 cloves garlic, chopped
    2 c. uncooked rice
    4 c. water
    salt and pepper to taste
    cayenne to taste
    green onions to taste
    parsley
Preparation
    Brown sausage in heavy skillet in cooking oil until well browned.
    Add onion, celery, bell pepper and garlic.
    Cook until onion is transparent.
    Add rice, water and seasonings.
    Cover and cook over low heat, stirring frequently.
    (If rice does not seem to be cooking thoroughly through this process, continue adding water in small amounts until cooked.)
    Add green onions and parsley just before serving.
