Tomato Relish - cooking recipe

Ingredients
    4 qt. green tomatoes
    4 qt. red tomatoes
    1 stalk celery
    3 onions, chopped
    1 small cabbage, chopped
    1/2 c. plain salt
    4 c. vinegar
    3 lb. brown sugar
    1/2 c. mustard seed
Preparation
    Grind the first 5 ingredients through a coarse grinder. Soak mixture overnight
    in
    plain salt.
    Mix thoroughly.
    Wash excess salt off.
    Add
    vinegar and brown sugar.
    Place mustard seed in a small cheesecloth bag.
    Cook vinegar and ingredients slowly, 1 hour.
    Remove
    spice
    bag.
    Makes approximately 8 to 12 pints.
