Green Chile Quesadillas - cooking recipe

Ingredients
    2 c. Cheddar cheese, shredded
    1 c. Ortega diced green chiles
    1/2 c. whole kernel corn
    1/4 c. green onions, sliced
    10 fajita-sized flour tortillas
    Ortega salsa
    fresh cilantro, chopped (optional)
Preparation
    In a medium bowl, combine cheese, chiles, corn and green onions.
    Spread 1/3 c. cheese mixture onto one half of each tortilla and fold tortilla in half.
    Spray a large skillet with nonstick cooking spray and place 2 quesadillas at a time in the skillet.
    Cook each side over medium heat until tortilla is golden brown and cheese is melted.
    Repeat with remaining ingredients. Cut each quesadilla in half and serve with salsa and cilantro. Makes 10.
