Farmer'S Market Vegetables - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 small onion, minced
    1 clove garlic, minced or pressed
    1 lb. mixed peppers, chopped (sweet green bell peppers, red bell peppers, Italian peppers, banana peppers or whatever is in the market)
    3 large tomatoes, chopped
    2 tsp. chopped fresh basil or 1 tsp. dried
    1 tsp. chopped fresh marjoram or 1/2 tsp. dried
Preparation
    Heat oil in a heavy bottomed skillet and saute the onion and garlic over medium-low heat until tender, 3 to 5 minutes.
    Add the peppers; saute for 5 more minutes.
    Add tomatoes and herbs.
    Cover and cook for 20 minutes.
    Salt and pepper to taste.
