Sweet Potato Casserole - cooking recipe

Ingredients
    3 c. sweet potatoes, mashed
    3/4 c. sugar
    1/2 c. butter
    3 eggs, beaten
    1 tsp. vanilla
    1 tsp. ground nutmeg
    1 c. raisins (optional)
    1 c. sour cream
    pinch of salt
    pinch of baking soda
    marshmallows and/or pecans (for topping)
Preparation
    Boil 4 large, unpeeled sweet potatoes or enough to make 3 cups when mashed. Peel and place in mixing bowl. Mash well with a fork. With a wooden spoon, stir in the sugar, butter, eggs, vanilla, nutmeg, raisins and sour cream. Mix well. Add salt and baking soda and stir. Spread the mixture in a 1 1/2-quart baking dish and bake, uncovered, at 350\u00b0 for 35 to 45 minutes. When done, place marshmallows and pecans, if desired, on top and put casserole back in oven until marshmallows melt and lightly brown.
