Pork Chop And Vegetable Dinner - cooking recipe
Ingredients

1 (8 oz.) can sliced pineapple
4 lean boneless pork chops
1 medium sweet potato, peeled and sliced
1 small acorn squash, sliced
1 Tbsp. brown sugar
2 Tbsp. raisins
1/2 c. apple juice
1 apple, cored and thick sliced
Preparation

Drain pineapple, reserving juice.
Coat a large skillet with cooking spray.
Place over heat until hot.
Add pork chops and brown on each side.
Layer sweet potato, squash and pineapple over pork chops.
Combine reserved pineapple juice, brown sugar and next 2 ingredients.
Stir well and pour over pineapple.
Cover and reduce heat and simmer 30 minutes.
Add apple slices, cover and cook an additional 5 minutes.
