Red Beans & Rice - cooking recipe

Ingredients
    4 cans light red kidney beans
    1 large onion, chopped
    2 cloves garlic, chopped
    1 1/2 lb. Hillshire Beef Sausage (or any lean sausage)
    1 tsp. salt
    1 tsp. black pepper
    1 tsp. red ground pepper
    2 tsp. Zatarain's Creole Seasoning
    2 bay leaves
Preparation
    Cook sausage in oven & set aside. Cook beans, onion, garlic, and seasonings 20 minutes. Add sliced sausage plus 1 Tbsp. sausage fat to bean mixture. Simmer for about 45 minutes. Serve over rice. Serves 7 to 8. I like cornbread with this.
