Potato Soup - cooking recipe
Ingredients

4 slices bacon, diced
1 c. chopped celery
1/2 c. chopped onion
1 large potato, peeled and finely chopped (1 1/2 c.)
1 c. shredded carrot
1/8 tsp. ground allspice
1 bay leaf
salt and pepper to taste
2 c. water
1/2 c. sour cream
2 Tbsp. all-purpose flour
1 1/2 c. half and half cream
1 lb. potatoes, cooked and mashed
Preparation

Cook bacon until crisp.
Drain, reserving drippings.
Cook celery and onion in drippings.
In large pot, add celery, onion, chopped potato, carrot, allspice, bay leaf, salt, pepper and water.
Heat mixture to boiling.
Reduce heat and simmer covered about 20 minutes or until vegetables are tender.
Remove bay leaf. Combine sour cream and flour and gradually stir in half and half. Mixture may be lumpy.
Stir in soup until thickened and bubbly. Stir in mashed potatoes and bacon.
Makes 6 servings.
