Louisiana Gumbo - cooking recipe
Ingredients

1/4 c. cooking oil
1/3 c. flour
1/2 c. chopped onion
1/3 c. celery or green pepper
1/4 tsp. black pepper
4 cloves garlic, minced
1/4 tsp. ground red pepper
3 c. chicken broth
1/2 lb. sliced smoked sausage
2 bay leaves
4 chicken breasts, skinned, boned and cut up
2 c. cooked rice
Preparation

Brown flour and oil in a saucepan until a copper color; add onion, celery, garlic and both peppers.
Cook until tender.
Add remaining ingredients except rice.
Cook 2 hours.
Just before serving, add 1/4 teaspoon file.
Serve over rice.
