Eggplant - cooking recipe

Ingredients
    1 large eggplant
    salt
    1 medium onion, chopped
    1/2 can tomatoes (with juice)
    bacon drippings
    about 1/2 c. crumbled cornbread
    1/2 c. grated cheese
Preparation
    Peel and chop
    eggplant.
    Cook\tin
    water until tender. Salt to taste.
    When
    tender,
    drain
    off
    water and mash with potato masher.
    Add
    onion
    and tomatoes.\tAdd bacon drippings to season. Mix cornbread and most of grated cheese and add to eggplant mixture.
    Sprinkle
    remaining
    grated
    cheese
    over mixture. Bake in greased dish at 350\u00b0 about 30 to 35 minutes.
