Onions Au Gratin - cooking recipe
Ingredients

4 c. onions, sliced 1/2 inch thick
1/2 tsp. salt
1 c. boiling water
2 Tbsp. butter
2 Tbsp. flour
1/2 tsp. salt
1 c. milk
1/4 c. liquid from onions
1/2 to 3/4 c. Cheddar cheese, grated
buttered bread crumbs
pepper, to taste
Preparation

Cook sliced onions in salted water for 10 minutes.
Drain, reserving 1/4 c. liquid for the sauce.
Place onions in buttered baking dish.
Blend melted butter and flour in a saucepan.
Add salt and pepper.
Stir in milk and onion liquid.
Continue to stir and cook on low heat until thick.
Remove from heat, add cheese, and stir until it is melted.
Pour over onions and with a fork help sauce to flow down through onions.
Top with crumbs and bake at 375\u00b0 for 25 to 30 minutes.
This may be made ahead and stored in refrigerator until baking time.
