Pasta Fresca With Basil - cooking recipe

Ingredients
    8 oz. eggless rainbow pasta
    1/4 c. chopped fresh parsley
    1 tsp. olive oil
    3 Tbsp. chopped fresh basil or 2 tsp. dried
    1/3 c. chopped onion
    2 cloves garlic, minced
    1 1/2 lb. tomatoes, cored and diced, or 1 (28 oz.) can Italian-style whole tomatoes, chopped
    4 oz. part-skim Mozzarella cheese, grated
    freshly ground black pepper
Preparation
    Cook pasta according to package directions, omitting salt. While cooking pasta, prepare sauce.
    Heat the olive oil in a large saucepan.
    Saute onion and garlic until just tender.
    Add tomatoes, parsley and basil; simmer 15 to 20 minutes.
    Drain pasta.
    Mix with tomato sauce and cheese.
    Toss until cheese is melted.
    Sprinkle generously with freshly ground pepper.
    Serves 4 to 6.
